The spirit of the cuvée: Developing a great Picpoul thanks to this family of avant-garde winegrowers who very early on defended two fundamental principles: organic soil nourishment and advanced maturity of white grapes. The soils of this vineyard are clay and limestone and have been organically farmed for over 30 years. The grapes are harvested at night and cold settled to preserve the freshness of the fruit, fermented with indigenous yeasts, aged on lees for 3 months, and bottled early to help protect the wine's freshness and stability.
