Nigori questions
What is nigori sake?
Nigori is a cloudy style of sake that retains some fine rice solids after pressing or filtration. Its appearance can range from lightly hazy to creamy white. The remaining solids often create a fuller texture and noticeable rice sweetness. Nigori may be still or sparkling, so check the label before opening and serving.
Why is nigori sake cloudy?
Cloudiness comes from fine rice particles that remain in the finished sake. Unlike fully filtered clear sake, nigori is pressed through a coarser mesh or otherwise retains suspended solids. Those particles add body and a creamy mouthfeel. Gently invert the bottle if the producer recommends mixing settled sediment before serving.
Is nigori sake sweet?
Many nigori sakes taste off-dry to sweet because their creamy rice character makes sweetness more noticeable. Yet nigori is not automatically sweet. Acidity, alcohol, carbonation, and residual sugar vary by producer. Look for a tasting description if you want a drier example. Serve it well chilled to keep the texture refreshing.
What food pairs with nigori sake?
Its creamy texture pairs nicely with spicy dishes such as Korean fried chicken, Thai curry, or spicy tuna rolls. Nigori can also complement salty snacks, soft cheese, and fruit desserts. The sake's sweetness helps soften chile heat. Chill it thoroughly and use a small glass so the texture stays fresh and lively.
