Sauternes questions

How is Sauternes made?

Sauternes is a sweet white wine from Bordeaux made from grapes affected by noble rot, a beneficial form of Botrytis cinerea. Under suitable misty, dry conditions, the fungus concentrates sugar, acidity, and flavor in the grapes. Producers make several harvest passes to pick berries at the right stage of concentration.

What does Sauternes taste like?

Sauternes commonly tastes of apricot, peach, marmalade, honey, saffron, ginger, and dried pineapple. It is sweet, yet good examples retain acidity that keeps the palate from feeling flat. With age, richer notes of caramel, nuts, and spice can emerge. Sémillon is usually the main grape, often blended with Sauvignon Blanc.

What food pairs with Sauternes?

Sauternes is classic with blue cheese, foie gras, fruit tarts, and almond desserts. It can also be excellent with spicy food, particularly dishes that have some sweetness or richness. For dessert pairings, the food should be no sweeter than the wine. Serve it in small portions because the style is concentrated and rich.

How long does Sauternes last after opening?

Recorked Sauternes can often stay enjoyable in the refrigerator for several days, sometimes longer because its sugar and acidity help preserve it. Use a stopper and keep it cold. Older or more delicate bottles may fade sooner, so taste a small pour each day. Unopened quality bottles can age for many years.
